Gold Finch completes the Native Bird Trilogy from Two Stacks and Friends of Irish Whiskey (Ireland). Distilled at Cooley in December 2002, this rare 21-year-old single malt was matured in first-fill bourbon barrels before an extended six-year finish in Jamaican rum casks. The result is a bold and expressive whiskey that brings the trilogy to a close with vibrant tropical depth and mature Irish elegance.

Simple Tasting Notes

Nose: Ripe mango, candied lime, honeycomb, banana peel, vanilla bean, and toasted oak

Palate: Rich and silky—stone fruit, molasses, roasted pineapple, soft cereal malt, and clove

Finish: Lingering warmth with sweet spice, sugarcane richness, tropical oils, and a hint of peppery malt

More About the Pour

Distilled in December 2002 at the Cooley Distillery, this whiskey began with 15 years in first-fill bourbon cask, developing soft vanilla sweetness, orchard fruit, and clean malt character. A further six-year finish in Jamaican rum barrels brought rich molasses, exotic fruit, and spice to the fore.

This dual maturation showcases the incredible versatility of Irish single malt and the vibrancy that comes with bold, international cask finishes. Bottled at natural cask strength (54.7% ABV), non-chill filtered, and with no added colour, Gold Finch is both a tribute and a finale—wrapping up the trilogy with complexity, confidence, and unmistakable flair.

As the third and final release in the Native Bird Trilogy, Gold Finch celebrates the journey of Irish whiskey—native in heart, global in vision.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.

With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
