A forgotten Irish whiskey recipe recovered from the archives by whiskey historian Dr Fionnán O’Connor and brought back to life by the team at Boann Distillery. Rooted in Ireland’s historic distilling traditions, this distinctive mashbill combines 40% unmalted barley, 30% malted barley, 15% oats, 10% wheat and 5% rye, offering a glimpse into the diversity of grains once used by Irish distillers. Fully matured in a single Oloroso sherry hogshead, this rare release is limited to 220 bottles in circulation.

Building on the Polaris collection’s exploration of Ireland’s whiskey-making past, Polaris 4.3 brings a different historic grain recipe into the glass, preserving a forgotten chapter of Irish distilling heritage through a rare, single-cask release.

Tasting Notes

Nose: Rich sherry-led aromas of treacle, raisins and warming gingerbread, layered with orange peel, gentle oak and subtle herbal notes.

Palate: Full-bodied and warming, with sticky toffee, dried fruits and baking spices balanced by a creamy texture, rich malt character and hints of dark chocolate.

Finish: Long and evolving, with lingering spice, dried figs, toasted oak and delicate cocoa notes.

Polaris 4.3 is an invitation to explore the diversity of Irish whiskey through the lens of its past, challenging convention, rediscovering forgotten recipes and creating something entirely distinctive for today’s whiskey drinker.

Part of the Two Stacks Polaris Collection, where Ireland’s whiskey heritage meets independent thinking and a spirit of experimentation.

Sláinte.

//cdn.shopify.com/s/files/1/0863/2012/0084/files/2Stacks_Bottle_Polaris4.3_7f577302-3b56-4f0a-bbac-c68a6bf9e0a6.jpg?v=1793172902
