Nose
The nose opens with delicate summer fruits, reminiscent of ripe peaches and sun-kissed berries, with a layer of fragrant honey providing warmth and richness. As it evolves, there’s a subtle yet intriguing hint of black pepper, which adds depth and complexity. Underneath, a trace of sweet molasses from the rum casks subtly mingles, enhancing the aromas with an earthy sweetness that invites further exploration.

Palate
On the palate, the initial sweetness of toffee immediately captivates, offering a rich and creamy texture that dances on the tongue. This velvety sweetness is balanced by delicate oak traces, lending structure and a hint of dryness. As the flavors unfold, exotic fruits like apricot and mango take center stage, delivering a burst of juicy vibrancy. These tropical notes are beautifully complemented by a vanilla sweetness, reminiscent of fresh vanilla bean. Warming spices—soft cinnamon and a touch of nutmeg—slowly emerge, adding a comforting, spicy warmth that lingers.

Finish
The finish is exceptionally smooth, with a long, warming sensation that wraps the palate in comfort. A final flourish of tropical pineapple brings a refreshing brightness, balancing the sweeter elements. The Blackstrap Rum influence leaves a subtle yet distinct trace of molasses, creating a complex yet harmonious ending that invites another sip.

Sourced from Riverside Copperage, Blackstrap rum casks are barrels that have been used to age rum made from blackstrap molasses, the darkest and most concentrated by product of sugar refining. Blackstrap molasses imparts deep, robust flavors to the rum, which in turn influence the cask. These casks tend to lend bold, rich notes of molasses, caramel, and earthy sweetness to any spirit aged in them, along with subtle hints of tropical fruits and spices. When used for whiskey maturation, blackstrap rum casks can add unique layers of complexity, contributing to a distinctive and exotic finish.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.

With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
