Introducing the latest release from the Polaris Collection—a captivating 7-year-old Single Pot Still whiskey from the esteemed Great Northern Distillery. This distinctive edition was carefully chosen for its unique character, further enhanced by the influence of a Tokaji cask. After maturing in ex-bourbon barrels for the majority of its years, the casks were meticulously combined and underwent an 11-month finishing period in a single 300L Hungarian Oak Barrel.
The marriage of Tokaji, renowned for its quality, and the Hungarian Oak imparts an exquisite spice to this delightful whiskey. Take a moment to savor the experience:
Nose: Revel in the welcoming notes of fresh fruit, honey, red berries, dark oak, and spice. Allow the whiskey to breathe in the glass, revealing its true depth.
Taste: Indulge in the textured and oily richness, with distinct bites of plum, intricate complexity, and hints of dried fruits, figs, and almonds.
Finish: A dry and medium finish leaves a lingering warmth, with the added spice and subtle echoes of orange peel and vanilla dancing on the palate.
Fun Fact: The reddish hue from the Tokaji cask is a nod to its previous life, having first aged a rare Pinot Noir before embracing the sweet essence of Tokaji.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.
With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
