For Tramore Whiskey Club, we’ve gone deep into the Two Stacks bonded warehouse to uncover something truly special: a 23 Year Old Cooley Single Grain, matured patiently in bourbon casks before being finished in a cask that previously held Passito di Pantelleria - the intensely sweet, aromatic wine of the volcanic island of Pantelleria, off the coast of Sicily.
The result is an elegant meeting of old Irish grain whiskey and one of Italy’s most distinctive and treasured dessert wines.
After more than two decades in bourbon, the whiskey has developed the soft, refined character you only get with age, delicate vanilla, toasted oak, honey and orchard fruit, before the Passito cask brings another layer of richness, adding sun-dried fruit, citrus peel, apricot and a gentle Mediterranean sweetness.

Tasting Notes
Nose: Elegant and delicate. Vanilla cream, honeyed grain, ripe pear and soft orchard fruits, with subtle toasted oak. A little time in the glass reveals dried apricot and orange peel.
Palate: Silky and beautifully composed. Caramelised pear, vanilla, honey and golden malt give way to richer dried fruit, raisins and apricot from the Passito cask. Gentle oak spice adds structure without overpowering the whiskey.
Finish: Long, warming and refined. Candied citrus, dried stone fruit and soft vanilla linger alongside a delicate sweetness and polished oak.
From Ireland to Pantelleria
Pantelleria is a tiny volcanic island between Sicily and Tunisia, famed for its Passito di Pantelleria, traditionally made from sun-dried Zibibbo grapes. The intense Mediterranean sun concentrates the fruit, producing a wine renowned for its extraordinary aromatics, richness and natural sweetness.
It’s an unusual cask influence for Irish whiskey, and exactly the kind of unexpected maturation that makes this release worth seeking out.
After 23 years in bourbon, this Cooley Single Grain needed little intervention. The Passito finish simply adds another dimension, bringing together the elegance of aged Irish grain with the concentrated fruit character of one of Italy’s most distinctive wine regions.
Only 70 bottles have been produced.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.
With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
