More About the Pour:

Traditionally, Irish whiskey, unless labelled as Single Malt, was crafted from a blend of cereals like oat, rye, wheat, and corn. Pot Still Whiskey, once globally acclaimed for its quality and uniqueness, derives its distinct character from un-malted barley, which imparts a unique green apple spice to the spirit.

Finishing Two Stacks Double Barrel Pot Still in American Rye casks amplifies these spice notes, allowing the Pot Still spirit to truly shine.

Ingredients:

  • 35ml Single Pot Still whiskey
  • 100ml freshly brewed coffee
  • 10ml brown sugar syrup
  • Lightly whipped cream.

Method:

  1. Preheat the Glass – Fill with hot water, then discard.
  2. Add 35ml Single Pot Still Whiskey, 10ml brown sugar syrup, and 100ml freshly brewed coffee. Stir to combine.
  3. Gently pour lightly whipped cream over the back of a spoon to rest on top.
  4. Optionally garnish with grated nutmeg or chocolate.

Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.

With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
