To mark the final day of public consultation on Ireland’s Single Pot Still whiskey legislation, Dream Dram No.002 takes a slightly different path.
Rather than putting Single Pot Still whiskey centre stage, we wanted to celebrate the extraordinary diversity of Irish whiskey, pairing a rare cask of Bushmills Single Malt with an equally unusual finish from one of Ireland’s independent whiskey makers.
Distilled at Ireland’s oldest licensed distillery in May 2014, this exceptional Single Malt spent years maturing in a second-fill bourbon cask before being selected by Two Stacks.
It was then re-casked into a rare Boann Vintage Mashbill #5 Sherry Hogshead (40/30/30), where it spent a further 12 months developing a deeper layer of dried fruit, richness and spice.
Finally, drawn at its natural cask strength of 58.2% ABV and presented in our signature 100ml can, just 300 cans have been produced worldwide.

TASTING NOTES
Nose
Crème brûlée and vanilla pod lead the way, followed by toasted coconut, soft citrus oils and delicate old oak. Beneath it, hints of dried fruit begin to emerge from the Sherry cask.
Palate
Rich yet beautifully composed. Honeyed malt, banana bread and sweet bourbon oak meet dried fruit, gentle spice and a silky texture. At 58.2%, there is plenty of power, but remarkable balance, with the quintessential Bushmills orchard fruits shining through.
Finish
Long, warming and contemplative. Toffee and rich malt give way to drying oak, subtle spice and lingering dried fruit, leaving the influence of both casks beautifully intertwined.

For Dream Dram No.002, we went looking for something different: a rare Bushmills Single Malt, selected at Two Stacks and given a second life in a highly unusual Boann Vintage Mashbill Sherry Hogshead.

Pour 50ml of Dream Dram No.002 into a Copita or Glencairn and enjoy neat.
At 58.2%, this whiskey rewards patience. Add a few drops of still water and watch the cask strength open up, revealing deeper layers of vanilla, oak, dried fruit and spice.

Dream Dram is our private members-only release series, a collection of rare and remarkable cask pulls reserved exclusively for the Two Stacks Bonders community. These are whiskies that will never enter general release, never hit retail shelves, and never be available to the open market.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.
With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
