Pillars of Creation 2026 continues our mission to redefine Irish whiskey through unique collaboration and uncompromising flavours.

This release unites Single Pot Still spirit and malt whiskey in a 60/40 split, drawn from single casks and matured in full Oloroso sherry cask influence from Blackwater Distillery (Co. Waterford), blended with spirit from Lough Gill Distillery (Co. Sligo) - married for a further 8 weeks in a 500L Cream Sherry Butt. The result is layered, expressive, and distinctly Irish, a modern interpretation of classic structure and depth.


Tasting Notes

Nose:
Dried cherries, cola sweets and dark fruit sit alongside polished oak, raisins and soft honeyed nuttiness from the Oloroso cask influence.

Palate:
Rich pot still spice leads into caramelised apple, dates, ginger and leather dankness. Sweet and savoury in balance, with a mineral freshness from the Single Malt that keeps everything lifted and precise.

Finish:
Medium to long with salted chocolate, tea leaf dryness, oak polish and a deep sherryness that sticks.

Two Stacks is part of a new and adventurous chapter in Irish whiskey, and we want you to help us tell its tale!

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.

With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
