Vintage Mash Bill No.6 – The History of Wheat in Ireland
Polaris 4.2 charts a new course in the revival of Ireland’s lost mash bills.
Distilled at Boann in December 2020, Vintage Mash Bill No.6 explores the historic role of wheat in Irish distilling — a grain once used to soften and round the bold spice of traditional pot still whiskey before gradually disappearing from mainstream production.
This rare composition of 40% barley, 30% malted barley, 15% oats and 15% wheat reawakens that heritage, bringing texture, elegance and depth back into the glass.
Initially matured in a Planteray Barbados Rum cask, the whiskey was re-racked in June 2025 into a Pedro Ximénez Spínola Jerez cask, where it rested for a further nine months.
The result is a beautifully layered dual maturation — the rum cask delivering warmth, molasses richness and tropical undertones, while the PX finish adds dark sweetness, dried fruit intensity and luxurious weight.

Nose
Rich molasses and dark brown sugar rise first, followed by raisins, figs and toasted almonds. Subtle tropical warmth from the rum cask intertwines with polished oak and soft baking spice.
Palate
Luxuriously textured and full-bodied. Waves of treacle, sticky dates, and dark chocolate unfold, balanced by creamy cereal notes from the wheat and oats. The PX influence builds with layers of fig syrup, sultanas and warming spice.
Finish
Long and coating. Sweetness gradually gives way to pot still spice, toasted oak and lingering cocoa nib with a gentle echo of dried fruit.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.
With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
