A new chapter in the Smoke & Mirrors story. This cask strength single malt takes the same delicately peated spirit from The Great Northern Distillery and finishes it in a uniquely layered ex-Cognac cask that previously held maple syrup stout, creating a genuinely one-of-a-kind Irish whiskey. Rich, complex and unapologetically full-flavoured at 55% ABV, with no colouring and non-chill filtered.

Tasting Notes

Nose: Gentle campfire smoke opens things up, quickly giving way to dried orchard fruits and brandy-soaked raisins from the cognac wood. Warm maple syrup and toasted oak follow, with background notes of dark chocolate, vanilla, and a whisper of roasted coffee.

Palate: Full and oily at cask strength, with the peated malt backbone holding firm beneath waves of candied fruit, toffee, and rich caramel. The cognac influence brings a floral, almost Christmassy spice, think mixed peel and warm baking spices, while the maple adds a sweet, lingering depth without ever tipping into cloying territory.

Finish: Long and warming, with smoke returning gently alongside dried fruit, dark maple, and a pleasant oaky dryness.

Through sustainable operations and conscious choices in every aspect of our product, TWO Stacks Irish Whiskey aspires to set a standard for responsible business practices within the spirits community

Two Stacks is part of a new and adventurous chapter in Irish whiskey, and we want you to help us tell its tale!

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.

With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
