A standout new release: a richly matured 9 Year Old Single Pot Still, elevated by a vibrant Red Ice Wine cask finish for over 18months, our oldest to date. This edition bursts with ripe red berries, plum sweetness, and soft honeyed florals - an amplified, deeper evolution of our previous Ice Wine release.

Nose:
Red berries, poached plum, honeyed florals, and toasted oak with a touch of winter spice.

Palate:
Silky layers of strawberry, raspberry, caramel, and vanilla, supported by clove, white pepper, and mature malt depth.

Finish:
Long and luxurious - sweet, gently tannic, and fruit-forward, tapering with cocoa and spiced oak.

A beautifully balanced, indulgent single cask release\; only 300 bottles worldwide.

Ireland once had a rich history of cask bonding. A key lifeblood to the industry, where many towns and cities across the country had family ran businesses, big and small operating as bonders, grocers and merchants. Purchasing directly from established distilleries, the casks were left to mature before its subsequent bottling under the respective owner’s own label.

With the demise of the Irish whiskey industry in the early 20th century, only a handful of these great brands have survived to this day, and with it, the light that shines on this tradition was nearly extinguished for good.
